The growing season is the interval between the last spring frost and the first autumn frost, or alternatively the days with mean temperature >5 °C (cool-climate crops) or >10 °C (warm-climate crops). In Spain it varies enormously: from 200–220 days on the Meseta to 300–365 days on the Mediterranean coast and Canary Islands.

Global warming is lengthening the growing season across Europe: 10–20 days more since the 1960s. This allows new crops at previously marginal latitudes, but also exposes harvests to late frosts when they bud too early.
